I was quite happy with the Logan Red Dates Tea (龙眼红枣茶) I cooked previously, so decided to turn it into a jelly! A prefect dessert for the warm weather (well, all jellies are!).
I made the Longan Red Dates Tea as per normal and added in 1/2 tsp of dried wolf berries to use as a ‘deco’ for the jelly because of the bright color and also it’s good for the eyes. I didn’t add in the rock sugar for the tea but instead mix the jelly powder with 180g sugar before mixing it into 900ml of Longan Red Dates Tea (cook as per package instruction).

900ml Longan Red Dates Tea (without adding rock sugar)
1 packet Konnyaku Jelly
I felt so happy turning the tea into jelly! Taste good and looks good. And the longan is still juicy and sweet so it gave the jelly an additional texture. The wolf berries too! Healthy (as compared to canned fruits? i guess) and yummy all at the same time! What else to ask for? Something to enjoy on a warm afternoon…
