I must confess this was not my original plan. I had been eying on lemon curb and lemon cuppies for the longest time ever ( i super heart lemon). But both Giant at Vivo and NTUC at Jurong Point didn’t have any decent looking lemons! So so so disappointed. But grapefruit was selling at 3 for $1.80 at NTUC. So decided to do grapefruit favor instead. I mean both are acidic, so shouldn’t get too wrong.
I did the grapefruit curb on Saturday and let it to chill in the fridge overnight. Didn’t know what to expect since I hadn’t taste nor saw it before. But it didn’t went very wrong also! *happy girl* It tasted pretty sweet while warm, but after chilling overnight, the acidic and grapefruit taste is more distinct. And gave the cuppies an additional moisture. Super love how soft the cuppies turn out to be.
Recipe for Grapefruit Curb (adapted from Joy of Baking, original uses lemon)
80ml grapefruit juice
1 tbsp zest (i did not add)
1. Whisk eggs, sugar and juice over hot water bath till thicken
2. Remove from heat and strain
3. Stir in butter
4. Add zest (if you want)
5. Cover immediately and leave to cool
This curb thingy is commonly used for scones but I used it for cuppies instead. Somehow I love having fillings in cuppies, like jam, peanut butter or nutella. So wanted to try putting this in.

Recipe for Grapefruit Cupcake (adapted from No-Frills Recipes, original uses orange)
280g plain flour + 2 tsp baking powder (sift)
5 1/2 tbsp juice
pinch of salt
1. Cream butter and sugar
2. Add in eggs
3. Mix in flour and juice alternatively
4a. Bake as normal if not using curb OR
4b. 1 spoonful of batter, 1 teaspoon of curb, top to 3/4 with batter and top with some curb and swirl
5. Bake at 180degree for 20 to 25min
A very soft and moist cuppy!
Might try adding in some pulps next time, but I still hope to try the lemon favor ones! O my lemonssss
